Are you craving mashed potatoes and want something that is just as delicious and healthy? Try these herbed smashed red potatoes that are gluten and dairy free. This dish will compliment all most any protein that you prepare. They should look chunky and rustic. Simple and delicious!!
1 pound scrubbed and quartered red skinned potatoes
1 1/2 tsp sea salt
1/4 tsp freshly ground pepper
3 Tbs olive oil
1 cup chicken stock
3 Tbs chopped chives
1 cup chopped watercress
Place the potatoes in a medium pot with the chicken stock, teaspoon of salt and just enough cold water to cover the potatoes. Bring the water to a boil and cook until the potters are tender about 10 minutes or until you can place a knife through the potatoes without resistance.
Drain the potatoes and return them to the pot. Add the remaining 1/2 teaspoon salt and the olive oil and then mash with a potatoes masher or the back of a fork.
Stir in the ground pepper and chives. Fold in the watercress. If they seem a little dry still you can add a little chicken stock and only at about a tablespoon at a time. Makes bout 4-5 cups.
