Want to impress your valentine on Valentine’s day. Make lamb for your lamb chop! Really easy, tender and juicy! If you get the New Zealand grass fed lamb it is lower in fat and much healthier.  This is an easy recipe that is elegant and decadent.  A sure way to win over your Valentine.

 

 

 

INGRDEIENTS

2 Tbs olive oil

4-6 lamb chops

1/4 tsp pepper

Juice from 1/2 a lemon

DIRECTIONS

Mix the olive oil with the herbs, lemon, garlic and pepper in a bowl and then add the lamb.  Make sure all the chops are covered with the mixture and then cover and  refrigerate.   Leave in the refrigerator for 1-2 hours to let it marinate.  Remove the meat and marination about 45 to an hour before cooking.  You want the meat at room temperature when you start cooking.

Heat a grill pan or an outside grill on high heat until it is al most smoking.  Place the lamb on the grill and cook for 3 minutes and then flip and cook for an additional 3 minutes.  If you want medium cook for 3 1/2 minutes.  Squeeze the juice of 1/2 lemon over the lamb and serve.
